Yesterday I put the contents of an Aldi stew pack in the slow cooker to simmer for the day. This morning I transferred most of the mixture to a large bowl, alternating layers of the veg mix with layers of grated cheese, and topped it with leftover cauliflower cheese. This will be tomorrow’s lunch when my family are visiting.

The rest of the stew mix has been beefed up (if that’s the right term for veggie food) by adding a couple of spoonfuls of curry powder, some sweet peppers and fresh hot chillies.

Chilli 001One of the Cheyenne and four of the little ones, which are unlabelled but I had a nibble of one and it was incredibly hot.

Chilli 002I’ve just tried a taste of the curry as it’s being reduced on the hob, it’s going to have to be served with lots of rice!
