Pork and beans

This is a dish I’d not had for several years, my wife not being a fan of cheap meat, but while in Aldi this morning I spotted some diced pork. It was not on the shopping list but I bought a pack anyway.

The meat was dry fried before stirring it into a Pyrex containing two tins of beans. To this was added black pepper, garlic, mustard and mixed herbs before putting it in the fridge for a couple of hours allowing the flavours to infuse.

The dish was placed in the hot oven for 40 minutes after I’d cooked the kids’ tea. I would normally have served it with freshly baked bread but the kids had left quite a bit of their pizzas so I dunked their crusts in the beans instead.

A chilli-free meal but the pepper, garlic and mustard work together adding to flavour of the pork beautifully.
